- 2 tbs Chipotle and Honey Rub
- 2 tbs Extra Virgin Olive Oil
- 2 Boneless Chicken Breast
- Reduced-fat Pam
Preheat oven to 350 degrees.
Lightly spray one cooking sheet or tray with reduced fat Pam.
Put 2 tablespoons of Extra Virgin or Virgin Olive Oil (whichever you prefer) and 2
tablespoons of the Chipotle and Honey Rub Spice together and mix in a bowl with a fork
or spoon. If the mixture is too thick for your liking, add another 1 or 2 teaspoons of Extra
Virgin or Virgin Olive Oil and mix.
Olive oil may be switched out for non-fat butter or margarine.
Preparing Chicken Breast for baking:
Place the 2 chicken breasts (fresh or defrosted) on a plate. Take a brush, spoon or fork and lightly dip it into the olive oil and spice mixture; lightly brush chicken breasts with the olive oil and spice mixture.
Place chicken breasts onto cooking sheet with lightly glazed side facing down
onto the cooking sheet and lightly brush chicken breasts with the olive oil and spice mixture on the top side.
If you wish to marinate your chicken for a time prior to baking, place cooking sheet in refrigerator for 1 hour.
Cover sheet with aluminum foil and bake at 350 for 22-25 minutes.
Possible side dishes include salad, corn, vegetable medley, or baked potato.
