Place cut potatoes on baking sheet and drizzle olive oil over them. Season with salt and pepper and Herb De Provence Salt. With your hands, mix them all together and make sure all the potatoes are covered. Bake for 30 minutes then turn the potatoes. Return to oven and bake for about 15-20 minutes more.
Wash and halve brussels sprouts. Toss with diced onion, olive oil, dijon mustard, agave, and Chipotle & Honey Rub. Bake at 400ºF for 20-30 minutes, until they begin to crisp.
